This recipe makes about 80 pieces. It can last for 2 to 3 weeks if kept in air-tight containers. This easy recipe is very popular for celebration such as Hari Raya\/Eid Mubarak or Chinese New Year.<\/p>\n\n\n\n<p>Making mini chocolate cookies is fun and worthwhile! Here\u2019s a simple recipe you can try:<\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500g unsalted butter <\/li>\n\n\n\n<li>400g brown caster sugar <\/li>\n\n\n\n<li>2 tsp vanilla essence <\/li>\n\n\n\n<li>650g plain flour <\/li>\n\n\n\n<li>120g corn starch<\/li>\n\n\n\n<li>700g chocolate chips <\/li>\n\n\n\n<li>100g corn oil \/ vegetable oil<\/li>\n\n\n\n<li>2 tsp baking powder <\/li>\n\n\n\n<li>2 tsp baking soda <\/li>\n\n\n\n<li>2 eggs <\/li>\n\n\n\n<li>1 tsp salt <\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cut the cold butter into 1 cm cubes and leave it in room temperature until soft.<\/li>\n\n\n\n<li>Sift plain flour, corn starch, baking powder, and baking soda.<\/li>\n\n\n\n<li>Put soften butter in a bowl, add the brown caster sugar, and the salt.<\/li>\n\n\n\n<li>Mix the ingredients with spatula, but do not over beat. We do not want the butter mixture to be too fluffy.<\/li>\n\n\n\n<li> Add the eggs, and vanilla essence into the butter mixture. Mix well. Again, do not over beat.<\/li>\n\n\n\n<li>Add about 1 cup flour mixture.<\/li>\n\n\n\n<li>Add the corn oil. Mix well with spatula.<\/li>\n\n\n\n<li>Add the remaining flour. Mix well with spatula.<\/li>\n\n\n\n<li>Add the chocolate chips. Mix well with spatula.<\/li>\n\n\n\n<li>Transfer the mixture to a large plastic bag.<\/li>\n\n\n\n<li>Flattened the mixture to about 1.5 cm in thickness.<\/li>\n\n\n\n<li>Rest the mixture in fridge for at least an hour. This mixture can also be kept in in fridge overnight.<\/li>\n\n\n\n<li>Grease and line baking tray. Preheat oven to 170\u00b0C.<\/li>\n\n\n\n<li>Take the cookie dough out from the fridge for about 10 minutes before cutting it into a 1.5 cm<sup>2<\/sup>.<\/li>\n\n\n\n<li>Arrange the portioned cookie dough to be at least 2 cm apart. <\/li>\n\n\n\n<li>Bake in the oven for 10-12 minutes.<\/li>\n\n\n\n<li>Take out from oven and leave to cool.<\/li>\n\n\n\n<li>Enjoy the cookies.
