If kept in air-tight containers it can last for 2 to 3 weeks. <\/p>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250g whole almond <\/li>\n\n\n\n<li>100g almonds nibs <\/li>\n\n\n\n<li>250g butter  <\/li>\n\n\n\n<li>90g icing sugar <\/li>\n\n\n\n<li>2 egg yolks <\/li>\n\n\n\n<li>250g  plain flour <\/li>\n\n\n\n<li>200g cup corn flour <\/li>\n\n\n\n<li>2 tbsp rice flour <\/li>\n\n\n\n<li>50g cornflakes powder<\/li>\n\n\n\n<li>2 tbsp milk powder <\/li>\n\n\n\n<li>500g cooking chocolate<\/li>\n\n\n\n<li>1-2 tbsp of shortening<\/li>\n\n\n\n<li>Extra mini cupcake baking cups<\/li>\n<\/ul>\n\n\n\n<p><strong>Instructions:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cut cold butter into 1 cm cubes and leave at room temperature to soften.<\/li>\n\n\n\n<li>Prepare the almonds:\n<ul class=\"wp-block-list\">\n<li>Preheat the oven to 150\u00b0C. <\/li>\n\n\n\n<li>Roast the whole almonds for about 10 minutes.<\/li>\n\n\n\n<li>Roast the almond nibs for about 7 minutes or until it is light brown in colour.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Grind the cornflakes into fine powder.<\/li>\n\n\n\n<li>Sift all flour- plain flour, corn flour, and rice flour and set aside.<\/li>\n\n\n\n<li>Separate the egg white and the egg yolk into a bowl. We only need the egg yolks.<\/li>\n\n\n\n<li>Put butter in a mixing bowl and add icing sugar.<\/li>\n\n\n\n<li>Beat the butter and icing sugar until it turn light yellow. Do not over beat the mixture.<\/li>\n\n\n\n<li>Add the egg yolks and beat again.<\/li>\n\n\n\n<li>Add the flour and cornflakes mixture, a spoon at a time.<\/li>\n\n\n\n<li>Continue to mix the dough by hand. Add butter if mixture is too dry.<\/li>\n\n\n\n<li>Rest the mixture for 10 minutes.<\/li>\n\n\n\n<li>Put mixture in large food bag and roll into a log.<\/li>\n\n\n\n<li>Divide the mixture into about 120 balls.<\/li>\n\n\n\n<li>Preheat oven to 170\u00b0C.
