Ingredients:
- 10 cups / 350g cornflakes (lightly crushed)
- 1/2 cups / 170g cup honey
- 1/2 cups / 150g cup butter
- 3 tablespoons / 50g castor sugar
- Multi-coloured sugar sprinkles or strands for toppings
- Extra mini cupcake baking cups (about 80 pieces)
Instructions:
- Prep the ingredients:
- Crush the cornflakes lightly so that they’re broken but not powdered.
- Mix wet ingredients:
- In a medium saucepan, melt the butter in a saucepan over low heat.
- Add the sugar and honey into the saucepan.
- Heat the mixture over medium heat, stirring until the sugar dissolves and everything is well combined.
- Turn off the heat.
- Combine with cornflakes:
- Pour the the cornflakes onto the melted mixture and stir gently to coat them evenly.
- Preheat the oven to 150°C.
- Shape the cookies:
- Drop spoonfuls of the mixture onto the extra min cupcake baking cups.
- Sprinkle with the multi-coloured sugar.
- Cook in the preheated oven for about 10-15 minutes.
- Cool and set:
- Allow the cookies to cool for about 30 minutes to set.
