Honey Cornflakes Biscuits

These honey cornflakes biscuits are crunchy, sweet, and easy to make with just a few ingredients. This recipe makes about 80 pieces. If kept in air-tight containers, it can last for 2 to 3 weeks. This easy recipe is very popular for celebration such as Hari Raya/Eid Mubarak or Chinese New Year.

Making cornflakes cookies is quick and easy! Here’s a simple recipe you can try:

Ingredients:

  • 10 cups / 350g cornflakes (lightly crushed)
  • 1/2 cups / 170g cup honey
  • 1/2 cups / 150g cup butter
  • 3 tablespoons / 50g castor sugar
  • Multi-coloured sugar sprinkles or strands for toppings
  • Extra mini cupcake baking cups (about 80 pieces)

Instructions:

  1. Prep the ingredients:
    • Crush the cornflakes lightly so that they’re broken but not powdered.
  2. Mix wet ingredients:
    • In a medium saucepan, melt the butter in a saucepan over low heat.
    • Add the sugar and honey into the saucepan.
    • Heat the mixture over medium heat, stirring until the sugar dissolves and everything is well combined.
    • Turn off the heat.
  3. Combine with cornflakes:
    • Pour the the cornflakes onto the melted mixture and stir gently to coat them evenly.
  4. Preheat the oven to 150°C.
  5. Shape the cookies:
    • Drop spoonfuls of the mixture onto the extra min cupcake baking cups.
    • Sprinkle with the multi-coloured sugar.
  6. Cook in the preheated oven for about 10-15 minutes.
  7. Cool and set:
    • Allow the cookies to cool for about 30 minutes to set.
  8. Enjoy!
    • Once the cookies are set, they are ready to enjoy! Or it can be stored for future consumption.
